Turning Over A Healthy Leaf

Zach and I have been on a health kick for quite some time now. I have always been into fitness and health, whether it be playing a sport, working out, or watching what I eat. Zach and I are always trying to do something active or trying to eat better. I have noticed in the past year or so that my stomach become bloated and uncomfortable with gluten and dairy ( the two main allergens). I have cut them out of my diet along with sugars and most soy. I feel so much better. Zach has been a trooper and has stuck with me on it. He has been excited to try all new sorts of recipes that are healthy.

I first got inspired by this lifestyle by watching a blogger on Youtube, Mimi Ikonn and her husband Alex Ikonn. They inspire us to much to not take life for granted. To supply our bodies with food that is going to nourish us that does not have weird ingredients and odd labels. The foods that we have been sticking to are fruits, vegetables and meats.

I have been doing a lot of research on healthy baking and cooking. (Paleo style). No dairy, grains, etc... I have found many alternatives such as coconut flour, almond flour, coconut sugar to bake with (it is low on the glycemic index and very good for you), vegan salad dressings, veganaise (vegan mayonnaise), coffee creamer that is dairy and gluten free and much more. For sweet cravings I will make Paleo chocolate which has three ingredients. YUM. Many people are scared of eating healthy because it costs so much or it could just be that people are lazy, haha. I have saved money by not spending it on junk food that is just empty calories anyway. Reading labels and seeing if they have added sugars or anything like that is beneficial to starting this lifestyle. Zach and I have so much more energy and it really is easy now. Eating out is a breeze because we just find dishes that are gluten free and dairy free which most restaurants have now. Ridding these things from your diet will be so beneficial for many reasons. Another tip for this lifestyle is to clean our your pantry and refrigerator or any "bad" foods that could tempt you.
We have also been making fresh mint tea in the evening before bed- all you need is fresh mint and hot water, let it steep and enjoy!

This post was inspired by a friend of mine that I have been friends with since middle school. We started going to the gym together a few weeks ago and we have so much fun that we are usually there for 2 hours a day. She is getting married next week. EEK! A few weeks ago I suggested eating this way and ever since then she has lost about ten pounds, has lost so many inches and her wedding dress is now too big. She feels amazing and has wanted to get that weight off since middle school. It is totally possible and you can have fun while doing it! Do it with a friend and have fun with it.
pork chop, sautéed cauliflower, sweet potato fries

Paleo cookies with coconut sugar, honey and Namaste (gluten free flour blend)

These are paleo chocolate balls- dries dates, mashed; peanut butter, and organic coco powder

Sweet potato nachos, hold the cheese- black beans, sweet potatoes baked, chicken, homemade guac, salsa and jalapeños

we even switched over to natural laundry detergent- no more itchiness

Carrot pasta, with sautéed spinach and mushrooms- SO GOOD

We try to go to any juice bar that we can

We have been making our own homemade juices pictured is a pineapple and jalapeño

Pure carrot juice- my dad asked if we put sugar in it. NOPE, it is just that sweet!

My favorite breakfast lately is this! Gluten free rice cakes, almond butter and banana

1st Anni & Cali

I cannot believe that a year has flown by this fast since Zach and I have been married- that is CRAZY! We have been so busy this year that it really slipped through our fingers. We have had so much fun along the way though. For our 1st anni we were thinking about going to the Waldorf Astoria which is where we stayed on our wedding night but we decided that we are beach bums to the max and that is where we enjoy to be the most- my parents helped us get there and we are so grateful #brokeandincollege
We left Thursday evening for the airport after work and all of our worries were left in Utah. We had such a fun time just hanging out and being together in one of our favorite places. We love to travel and if it has a beach... we are down! Saturday was our actual anniversary which was lovely; it pretty much consisted of backflips in the pool, and body surfing in the ocean.

The previous Sunday our parents and a few friends threw us a 1 year Anni party which was amazing because Zach and I finally got to try our cake which we did not get to try at the wedding- and boy was it amazing. I am so glad our cousin Catie made it... it is probably the best cake that I have tasted. PS: my mom said that the two on the cake is for "going on two years" ;) haha

I hope that you enjoy coming along on this trip- we did not take too many pictures because honestly we were just enjoying our time together.
PPS: the Nektar juice bar is probably one of our favorite places to go in Huntington, so if you get a chance to go, we would definitely recommend it!
Here is to our 1 year anniversary! Woot woot!
